Confused About Minors and Classes Outside of Majors

A quick note before you read this: Do not tell me that I am going to be penniless or that my major is worthless, etc. I know very well what I am getting myself into.
Now that that's out of the way...
Okay, so I am majoring in writing and linguistics, and my school requires a minor for liberal arts students. After a lot of stressing and freaking out, I have narrowed down my long list of potential minors to two- humanities and theatre. Reason for each: Humanities encompasses all the other subjects I wished to minor in, such as film, literature, music history, philosophy, and religion. However, after switching to a new high school in eleventh grade, I quickly fell in love with theatre and rose to the top of our thespian troupe as the best female actress in our school. While I was good enough to get the overall drama award at my podunk high school, I'm not so sure I'll be good enough to get any decent roles in a college theatre program. That being said, I really love acting, directing, and playwriting, and I feel like I'm going to miss it if I don't keep it up in college.
I guess I could have two minors, and if I were interested in studying anything other than theatre, I wouldn't even be asking this question. But if you've ever been part of a production, then you know that theatre requires a lot of time and effort, and I'm afraid that with another major and minor, I just won't have the time.
So, my question is, do I double minor? Is it possible to have one minor and take classes in another field, but not enough to constitute an official minor? I figure I can start out taking courses in both theatre and humanities, and after first semester is over, decide which one I like best and declare it as my minor. I thought it might be better to do that with the humanities courses, since they're all so spread out, anyways, but since theatre is more of a side passion than something I want to pursue (well, maybe that's true- while I don't see myself becoming a profession actress, I genuinely think I could pursue play writing), I don't know if it should be my minor. I still don't know if I should do it at all. I just don't know if I'd want to even attempt being in a college production without taking some classes first.

This is all very confusing for me. First and foremost, I want to be a writer. I'm just so interested in everything all at once, man...
