Courses for last year of high school?

So I am in the course selection process for the last year of high school. I am definitely going to take AP English Literature and AP Chem, very likely going to take AP Psych and AP Enviro Science, and possibly an EPGY math course and Digital Arts 12, but for the rest of my courses I have struck some dilemmas:

1) I have taken French for three years in a row now, and I am currently debating on whether I should take French in my last year or not. Due to a conflict this year I couldn't take French 11 Advanced (not Honors because I live in Canada), which means I won't be able to take AP French next year (unless I take French 12 in the summer, but then I will likely get a bad mark on the AP exam). My counsellor told me it doesn't make a huge difference whether I don't take French or I take French 12 or AP French, but I'm a bit skeptical. On one hand, I want to major in engineering (so French may not be that important), and by not taking French I can fit in another AP. On the other hand, my goal university is Stanford or MIT, which means that one extra year of French may be crucial, and I want to keep a consistency in my courses. So should I take a French course or not, and if yes, which one?

2) Should I take AP Human Geo or AP Euro History? I want to take an AP Social Studies, and since I'm going into engineering, I have been leaning towards AP Human Geo. However, I have heard way too many times that AP Human Geo is considerably easy, while AP Euro History is really hard. I know that for college the admissions people expect that students challenged themselves, so I also feel that taking AP Euro History would be much more advantageous. I don't think I would take both unless that's a really good option. So should I just go for AP Euro?

3) Just a minor point: would not taking Biology affect my likelihood of getting accepted by a lot? I am currently taking AP Phys C and will take AP Chem next year, so I'm set for the other sciences, but as for Bio I only have two years worth. That's partly the reason I am going to take AP Enviro Science (to make up for this lack) but should I just take Bio 11 in the summer (which won't be too easy)? Would I be severely disadvantaged if I don't?

That was a lot to say, but if you're reading this, all help is greatly appreciated! Thanks a lot :D

don’t overload yourself. Take classes you like to take regardless of college admissions. Take AP classes your really interested in, don’t take them just to boost your gpa.

I personally think you should take another French class if you like the language. It is recommended by most colleges that you take 3 years of a foreign language though. Also i think you should take AP European history, but that’s only because it’s interesting to me, if you think AP human geo is more interesting then take it. I think you would do better in the course if you are interested in the subject. Lastly, what other biology courses have you taken?

Thanks for both of your responses! I think my schedule is coming to shape a bit better now.
@Camilouisee I’ve only taken grades 9 and 10 biology… :C but I feel like if I devote enough time, I’ll be able to catch up and take AP Bio (if I beg my teachers that is, haha)
