Need help on my course selection

I'm a sophomore going into junior next year, and I need to make rather a very quick decision. I live in Vancouver, Canada, so our school system would be a little different than the ones in the US. I'm looking into medicine, science, or maybe IR, but I haven't decided yet.
So next year, I'll be taking the following FOR SURE

English 11
Spanish 11
Social Studies 11
Math 11 Honours

But this is only a part of my schedule (I'm supposed to take 8 every year), can anyone help me pick a good choice?

Here is my choice A
Choice A :
To take
Biology 12
Chem 12
Physics 12
Peer Counselling 11
And take liberal arts courses (Comparative Civ. 12, Eng Lit 12, Writing, etc.) in my senior year

I already have all the science/math requirements to take grade 12 science courses, so I will be able to take care of all the sciences early and take liberal arts in grade 12. And I can also self-study for AP science exams.
However, I will definitely not get outstanding marks in these courses(high 90s) since I'm going to be extremely busy next year.

Choice B:
To take
French 9
French 10
Peer Counselling 11
(One of science 12s)
and take all the grade 12 sciences and grade 11 french in my senior grade as well as one or two LA courses

I'm thinking of taking an another language since it might be useful when writing resumes/applications and stuff. And I'm quite interested in languages, and also do quite well in them too. But I'm not sure if I'm going to be okay with this. I'm sure I'll do great in these courses, but I won't be able to self-study APs and courses won't be as challenging as the other choices.

Choice C:
To graduate early

I will have all the required credit for graduation at the end of my junior year. But to graduate early, my schedule is going to be extremely hectic so basically my dream of going to the US universities is pretty much gone (no time to prepare myself for it). My choice of university will be limited McGill, U of T, Queens...;( But it'd be good to get ahead of everyone and start my college experience early.

Please help XD
