I know WUSTL is big on demonstrated interest, but I simply don't have the time and money to make a campus visit. Seeing as there's no supplement or alumni interview, what are some ways I can show the admissions committee that I'm serious about applying and that it's a school I am genuinely interested in?

Actually, alumni interviews are available if you request them. You can contact the Alumni & Parents Admission Program to find out who you can meet (it's even a toll free call at 800-935-4826). You can also attend one of the informational meetings that reps may have in your area (check the admissions web site for their schedule, although many have passed). You can also apply for merit based scholarships which definitely shows interest (even if you don't get the scholarship).

i also faced this problem because i decided to go early decision very late.
i called the rep for my area and he said if you are applying early it is too late for alumni interview, but simply applying early shows enough interest as it is binding.
if you are applying regular decision there will be another round of alumni interview that you can try to schedule one in your area.
