It does matter, but I think you should still try your best to get in with the major you like. There is a website on this forum which lets you see the stats of admitted students.

Thanks I really enjoy psychology but the admit rate is 21% compared to the 67% admit rate of Anthropology which is a major Im actually OK with. Is it worth giving up my favorite major just to improve my chances?

OK may mean that you will hate it. I chose Computer Science as my major at first because I didnt hate it, but then after taking 2 classes, I hated it :)). So I think you should pick your intended career which you may be stuck with for your whole life over your dream school. If you get in with your major, thats the best, but if you dont, go to the school that accepts you with the major you want. You may also switch your major after transfer, but I dont know any information about this.

I switched to Math, but this was at a CC. If you really love pyschology, go for it. Also, I think with this major, you would want to go to grad school? If so, i think it doesnt really matter what undergrad you go to, the grad school matters more.
