Essay Topic not cohesive with Intended Major

Hi all,
I am applying to the University of California schools right now (literally). If you are not familiar with their application process, you basically write two essays for the application and submit the same application to every UC you apply to with the respected major pertaining to each school.

My dilemna is this... One of my essays expresses how astronomy inspired me to be interested in science, and why I became an assistant astronomy instructor at the Space and Science Center- to inspire kids in science via astronomy.
For most of the UC's, I am applying for majors in the science field (nutritional science, public health). However, I don't think I can get in with a science major at UCLA, because all their science majors are impacted and I believe my academic performance is not strong or competitive enough.

So I was thinking of applying as a Art History major. I have been an artist for several years and I have won awards, so art history sounds appealing and interesting to me. However, one of my essay topics is about science. Do you think they will see my application and go "Eh? Why is she talking about science in one of her essays and applying for a major in art history?"
What if I apply undeclared?

Any kind of feedback/input would be greatly appreciated. Thank you so much, everyone! :)

P.S. My essay on science is about 260 words long. My other (core) essay is the longer one (750 words). Nevertheless...

Unless you’re applying to a specific school like a school of engineering at a university, I don’t think that colleges pay that much attention to your intended major. Most college students change their majors at least twice during their college careers.

So, I think it wouldn’t be a problem to submit the kind of essays you’re considering.
