I take Choir and Orchestra as an elective in school, and it’s a class but I feel like those are things that should be listed as extracurriculars. When filling out college apps what should I list them as?
It can be both - it depends. If you perform outside of the academic day, then those hours can certainly be counted as ECs.

You are a rising sophomore – it is too early to be thinking about how to structure your college application.
But to answer your question, hours outside of the normal school day can be ECs (ex. early morning practices, performances after the school day). Class time should not be double counted an EC time.
^^ It’s not too early. True, you shouldn’t stress about it too much, but it’s good to be thinking ahead so that junior/senior year doesn’t come and bite you in the butt.
I didn’t say it is a bad idea to think ahead, plan ahead, and understand college is in the future. I only said it is too early to be concerned about how to fill out a particular line on a college application that is two years away.
Considering it’s a class, I would probably not list it. However, do you practice frequently outside of school as part of it, and does your school officially offer it as an EC? (Like taking Band I in school, then actually joining the Band) Then, yes, include it.
On the SRAR you’d list it as a class since presumably it appears on your transcript and you get a grade.
Since you probably perform, rehearsed etc, it appears as such on the EC list along with your title (first chair, etc).
