Extracurriculars?

I'm a sophomore in high school, and I'm wondering what sorts of extracurricular activities I should take. I already know that I want to major in architecture and minor in economics (my to 3 college choices are Cooper Union, Columbia, and Cornell as of right now), and I want to participate in activities that are more related to the humanities. Any suggestions/ info on programs I can take art in?

Right now, I'm involved in some volunteering organization, arts program, design program, and I'm vp/co-pres and founder for some clubs in the school. I enter local contests. I tutor. I'm also in quiz bowl, and i'm a contributing writer/artist for some magazines/newspapers in the school. I am a soprano in my school's choir and I play the piano and passed NYSMMA Level 6. My plan for next year is to rejoin Model UN if I have the time, get a position(like sectional editor) for school magazine/newspaper, do Columbia's SHP program if i'm accepted, enter local art contests while continuing my weekly art lessons (which I've done for the past 8-9 yrs), get myself onto the tennis team (i play/practice this yr), get an internship at an architectural firm, intern in-school for math, apply for at least 3 summer programs (I was thinking TASP, an engineering program, or an arts programs) and start an organization outside of school where I would be able to promote and teach artwork to younger kids, as well as curate artworks and hold exhibitions for teens' artworks (do you think this is unoriginal, and how should I carry this out?)

I know, this probably seems unrealistic and a bit oveloaded but I'm determined to get this done. Also, if I mention, when I apply to colleges, that I emigrated to NYC from China at the age of 5, and that my parents are in China(and thus, don't live anywhere live me) and I live with 3 younger cousins and my grandparents, will it look good on my application?

Also, does anyone know how much weight Cooper Union (school of architecture) puts on extracurriculars, or is admissions just mostly based on the home test and academics (my academics are in good shape, last time i checked). Thanks!:)
