Food in College

<p>So I'm a rising sophomore and I'm going to have an apartment with a kitchen this year. I was wondering what others did about meals and what some of your favorite recipes are. I've been looking around for easy and/or cheap recipes that also are somewhat healthy, but I'd like to have the input of others.</p>

<p>For deliciousness, I'll post this recipe for mint chocolate chip cookies that I found on Pinterest. The recipe is rather simple. It didn't take long to make and they were a complete hit at my house and with my sister's guests.</p>

<p>Mint Chocolate Chip Cookies Recipe
INGREDIENTS:
1 pouch (1 lb 1.5 oz) Betty Crocker® sugar cookie mix
1/2 cup butter or margarine, softened
1/4 to 1/2 teaspoon mint extract
6 to 8 drops green food color
1 egg
1 cup creme de menthe baking chips
1 cup semisweet chocolate chunks
DIRECTIONS:
1. Heat oven to 350°F. In large bowl, stir cookie mix, butter, extract, food color and egg until soft dough forms. Stir in creme de menthe baking chips and chocolate chunks.
2. Using small cookie scoop or teaspoon, drop dough 2 inches apart on ungreased cookie sheet.
3. Bake 8 to 10 minutes or until set. Cool 3 minutes; remove from cookie sheet to wire rack. Serve warm or cool completely. Store tightly covered at room temperature.</p>

<p>This is one of my favorite mac ‘n’ cheese recipes. It’s pretty easy, takes some time but that’s what weekends are for. Save the leftovers for later… don’t share with your friends or there won’t be any leftovers remaining!!</p>

<p>Except I did a little replacing. I used frozen chicken I already baked for the chicken. I replaced the black beans with kidney beans, and I used cream of chicken soup not chicken broth. I like the creamier taste. I would also mess with the spices in it. Cheap enough and tasty, IMO. I’d fry up a tortilla to dip in the soup and put some shredder cheese and sour cream on top right before I ate it. It was awesome. Now I want some. </p>

<p>I also fell in love with Bisquik that semester. Chicken pot pie in a biscuit:</p>

<p>Normal amount of bisquik as what is called for on the box.
Chicken broth to replace milk.
Chopped baked chicken
Corn
Shredded cheese
a little bit of garlic powder</p>

<p>Mix. Bake per box instructions, but pay attention… I can’t remember if these cooked quickly or slowly. They were great with some applesauce on the side and a glass of milk, or just as a quick snack when I was running late and they were in the fridge already made.</p>
