should i do apes or statistics? which one would seem more challenging and impressive?

Are you planning on majoring in a math/science related field?
Or are you taking multiple APs in the same subject just to make your schedule look good?
APES is pretty much a joke. When I had to choose between APES and regular Physics, I chose Physics.
AP Chemistry is very difficult as is AP Calculus. You really don’t need to overload yourself with AP Statistics. If you’re referring to regular Stat, take that instead of APES. Environmental Science is most likely something you’ll never need.
I’d suggest possibly replacing it with an honors History or fine arts course. But it depends on your major. If your desired career path includes science and math, go ahead and take APES. But other than that it’s a pretty useless course.

Neither AP Environmental Science nor AP Statistics is considered to be a particularly rigorous AP course, nor is either that widely accepted for subject credit in universities (unlike AP English and AP Calculus, for example).
