I was lazy. Had leftover roasted veggies heated up with some chickpeas.
Tonight we’ll have leftover lentil instapot recipe mentioned above. Sometimes I miss the old days, with kids at home. But gotta say it’s nice to have more leftovers available.
This week I bought fresh snap peas. How had I forgotten about those? They make a good snack or even a dinner veggie in a pinch (I like them raw, but I assume they are good steamed)

I am officially a huge fan of jackfruit now. H made some incredible BBQ sliders last night. Followed this recipe, more or less: BBQ Jackfruit Sandwiches | Minimalist Baker Recipes The one difference is that after simmering, he spread it on a baking sheet and put it under the broiler for a few minutes - this dried it out and crisped up the edges to give it that “burnt ends” texture. We topped them with a quick pickled red cabbage and carrot slaw. I opted to have mine over quinoa instead of on a bun, because I wanted some protein in the meal. It was so good and felt very decadent despite being a healthful meal.
Any suggestions for cilantro. I have some leftover in the fridge.

I mostly spinkle (with a heavy hand) cilantro on most of my Indian-ish cooking and on all of my Mexican-ish cooking. (Refried bean tacos yesterday.)

We were discussing my DH’s grandmother’s china recently - the dinner plates are sooo much smaller than today’s plates!
Yesterday we treated ourselves to a lunch out but instead of the huge deli sandwiches we enjoyed in the past, we went with a new “juice bar” that recently opened and got carryout. H had a wrap and I had a really tasty bowl of chopped spinach, quinoa, chicken breast, roasted sweet potato and carrots, Granny Smith apple and a low sugar vinaigrette. It was a good reminder to myself about portion sizes - just because something is a healthy bowl, you still have to be mindful of how much you are eating. I often find myself absent mindedly tossing in huge amounts of food just because it’s healthy. It’s still a calorie. I am now down 18 pounds with just very minor changes in my eating habits.
I made my first kale smoothie using our home grown kales recently. I grow lots of greens but it’s impossible to eat them up, so smoothie is a great way to use them.
That’s great! I think it took me a year to loose 18 pounds (first with running, then a few months later starting healthier eating). Keep up the good work
I may need to plant more kale in my garden this summer (maybe with seeds instead of a plant?). The rabbits mostly ignore kale. They love lettuce… I have to put lettuce in planters, placed on risers (poor man’s raised bed).

I just looked at Mynetdiary and I’m going to try it for a few weeks. In the past I’ve used a few other trackers but I’m game to try something new. I need to have more accountability in my meals. I’ve slowly put on some weight and I know I need to watch my carb consumption. I love bread, pasta,tortillas etc but i need to limit them to one or two days a week. When I do that I stay pretty steady at a good healthy weight.
I dropped more than 30 lbs from the peak, I think this is after our Tahiti trip, all you can eat buffet breakfast with lots of Portuguese sausages, I quickly lost 10lbs with a lot of daily swimming, but it stuck there for a long time, then I decided to eat just 2 meals a day, breakfast and lunch, and I don’t eat anything after 3pm, that’s how I lost the rest. The best part is I can eat anything I want, I love to bake so we have dessert practically everyday. My numbers are very good, the physician assistant said in his working career, he only met 3 people with my numbers at my age. I do have a digital scale to weight myself every day. I do eat lots of greens and fish, probably 2-3 times a week. I save carbs for dessert.

Interesting discovery today in tracking I see that the
2 tbsp of butter I used to caramelized an onion has almost as many calories as the 4 oz ground beef patty. That is what I like about tracking is it gives me info that I can use to decide how much an item is worth it to me. I didn’t need all the butter and normal would be olive oil but I had about 2 tbsp of butter left and decided to use it up. I saved a lot of calories and carbs by skipping the bun. The burger was still delicious even without the bun.
Yea, I think that is.a helpful thing about food tracking… even if you just do it for a little while to get a feel for the calories/nutrients in various foods.
I also enter exercise, as a reminder of trade off. If I run slow 5k there is 232 calories “uplift” for that day.
