Clearly I’m the outlier here! I make chia pudding with almond milk, vanilla and a little maple syrup to sweeten it. When I’m ready to eat it, I put fresh fruit (raspberries, banana) and a few nuts with it. I love hot oatmeal with bananas and nut butter added, a little honey.
I like hot steel cut oatmeal made with milk, a tiny bit of butter, and salt. That’s it. Fruit on the side. Cold oats just don’t taste right to me, but that’s just me. Kids like the cold versions… were never fans of hot oatmeal.
Definitely a preference for my oatmeal hot.

I am a big fan of beans and our co-op has started carrying Heyday Canning Co. varieties. A good quick meal in a pinch - chickpeas in a coconut curry sauce; chickpeas in a lemon harissa sauce; and cannelini beans in a tomato/vodka sauce are varieties I’ve liked. A can is about three meals for me when served with some rice or grain. I might try out the minestrone recipe linked in the article, although the weather doesn’t feel like hot soup weather!
I like the idea of beans in a tomato/vodka sauce. I’ll have to look out for this brand of beans.
And I prefer hot oatmeal too. With some add ins. Honey or maple syrup. Butter. Salt. Bananas actually might work for me. Dried fruit (plumps up) and some nuts. It’s like a salad - the next thing you know when you finish building it, it’s huge!!!
Interesting article. Yes, I really do need to eat more beans. Just have not gotten into a good habit for it.
I like hot oatmeal. I almost always have it with milk (or almond milk) and fruit (typically half a banana but sometimes berries). Sometimes I add chopped walnuts or honey too. My husband likes his oatmeal with cinnamon.
Thanks for the reminder about chia pudding. For a while I was making a really simple recipe with chia seeds, almond milk and vanilla. Just happen to be out of milk, so there is an almond milk already open in the fridge.
I make muesli with toasted oats, cinnamon, walnuts, pepitas, dried fruit and sometimes top with fresh blueberries or strawberries. I’m not fond of bananas but have tried that too. I eat it with a little milk like cold cereal. You can use it like overnight oats but I prefer crunchy to mushy.
I frequently make enough of this Instant Pot steel cut apple pie oatmeal for the week. DH h/eats most of it, but I’ll have some occasionally. Definitely has to be hot.

I get Eating Well article and recipes at my email inbox. This one was appealing because I sometimes hesitate to do recipes with buttermilk, not having other uses for the leftovers. This recipe uses 3/4c low-fat buttermilk.
If you cook/bake with buttermilk, feel free to post more ideas.

I always keep a very small bottle of buttermilk. It lasts a long time …it’s already sour so to speak! I’ll use it in baking or as above .
Side note: when I was a kid that was a big treat when my mom would give me a very small
Glass of buttermilk to drink! Sort of can’t believe she/I did that! It used to have like little yellow “butter” flecks in it
These are amazing! I can eat them non-stop. Hence, it is a rare treat.
At the risk of a cross-thread post, do you ever use buttermilk for your dutch baby “pancakes” (baked in cast iron skillet) ?
I haven’t - but worth a try! I wonder if the “heavier” milk would make a texture difference

Super easy to make your own buttermilk. One cup milk to 1 tbs white vinegar or lemon juice. Let sit 5 min. I much prefer vinegar.

I’ve been on a kick of fruit-milk-granola. More fruit than granola. For breakfast or for a light lunch substitute. This morning it’s blueberry-nectarine with milk and a toasted coconut granola. So good!
For the past week I’ve switched up my normal routine of berries, yogurt and granola by swapping nectarines for the berries. They are so wonderfully and deliciously in season right now…scrumptious!
