How big of an impact will taking AP Com Sci have on admission chances?

I'm a current high school senior and school just started today. One of my four AP classes (others are Physics, AB Calc, and German) is AP Com Sci. I'm really not interested in Computer Science or anything that has to do with it as a future career after learning some basics this summer, though I thought maybe I would be when we signed up for classes last winter. I also have seven hours due to needing another art credit, but I'd prefer not to take seven hours my senior year. Luckily AP Com Sci is first hour and would be easy to drop and I would probably be very happy with the decision come second semester.

I'm applying to the Colleges of Engineering at Purdue, MSU, UMich, RPI, and SUNY Buffalo for an affordable out of state safety. 3.81 unweighted (3.88 weighted) on a 4.0 scale, lots of honors classes since freshman year, 2 APs completed so far (English and Chemistry). 4.0 weighted since the start of second semester Sophomore year. Pretty solid extracurriculars.

TL;DR I really don't want to take AP Com Sci, but would consider either taking it to increase chances at U of M engineering (instate) or instead applying to LSA, which I think I would be a near definite acceptance. Just want a second opinion on all of this before I drop the class. Thanks.

Also sorry if wrong forum, but I think this is the right one.

It is a little bit confusing. You said you are not interested in anything that has to do with Computer Science but you want to major in engineering. Although AP Comp Sci is not necessary, but it is indeed related to any engineering and most first year engineering would include programming no matter what you will major in.
My D could not take AP Comp Sci in her senior year due to schedule conflict but she was accepted by most of the engineering schools she applied. Your uwGPA is a bit weak for UMich (average 3.85 for LSA and 3.9 for CoE). How is your ACT (or SAT if took it) score? If you got 30+, you should have a very good chance for LSA from in state.
If you do apply to LSA and got accepted, you will need to take certain classes in order to transfer into CoE which would include programming.
