I know that colleges will put out statements over and over again...and counselors will say it over and over again, "We do not have a required number of AP classes...AP scores are not entirely considered."
But I'm only taking one as a Junior and I really, to be honest, feel behind...and not competitive with other kids who are taking more...
I'm doing quite well in it, but I was just curious as to the number of APs, what's the "real deal"? :]

There's no absolute number of APs that one should take. You will be evaluated based on the number of APs offered at your school. So, how many AP courses you should take will depend on: what's offered at your HS, the colleges you're applying to, your grades in AP classes and to some extent your scores on the AP tests. [Some people don't think that AP scores count for admissions, but I think they do somewhat, or why else would they be asked for on your application?]

I would take advantage of the majority of what your school offers, AP-wise. It shows that you like to challenge yourself.

Don't over do it though! Just challenge yourself, but not to the point where you're freaking out over HW each night.

For example. I took 5 honors courses my freshman year and wanted to die. I took 2 APs my sophomore year, and 2 APs my junior year, and now I'm taking 3 APs as a senior (plus Calculus which basically counts as an AP). It worked out well.
