How many classes should I take senior year?

Currently I have signed up for:

AP Stat

AP Eng Lit

AP Bio

AP Calc

AP Gov / AP Econ

Weights

I took:
Freshman: 0 AP/Honors (school did not offer any for Freshman year)
Sophomore: 2 AP/Honors (2 max for sophomores)
Junior: 5 AP/Honors

I'm considering dropping AP Stat (b/c it's so boring...) and AP Eng Lit ( a lot a lot of work). I want to apply to UCLA, UCSD, and UCD.

Should I drop/keep these classes? I kind of want a easier senior year, but is it bad to have the amount of rigor decrease (since I took 5 last year)?

I don’t know specifically about UC schools, but I’ve read that admissions officers like to see course rigor either increase (if possible) or maintain. It shows students are capable of handling college work.
