This question is very difficult to answer. No information is provided about your academic and study skills, preparation for these classes, which ones might you find easy and others difficult, motivation and,so on. The best persons to answer these questions are students in your school have taken these classes and know you.
This will depend what you are good at and your study habits, and may also depend upon which teachers you get.

ap psych is fun and pretty straightforward, not to hard as long as you do the work.
lang involves more understanding of rhetoric, but if you’re willing to read and write, you should be fine!
ap bio was SUPER easy as a class if you were good at normal bio, but the ap exam is hella hard- the curve makes it not too hard to pass at all tho!
hope these go well for you, and the best advice is to stay on top of stuff and genuinely try to enjoy learning the content! (also good chance to impress teachers for letters of rec!)
And the teachers. Even within the same school, if different teachers teach different sections of the same class, the workload may be different. Students who have taken the classes at your school are the best ones to ask.
I think it depends on many factors, ap classes don’t have a rigorous workload, based on my own experience at my high school, but studying on your own time for tests and the ap exam is needed to get a good grade in the class and on the exam. For example in ap stats, the teachers didn’t expect you to do all of the work and the homework was optional, but if you did the homework it was beneficial on the super hard tests. So yeah, I might be completely wrong on how rigorous ap classes can be, because every school does everything differently.
