I'm planning on asking the cardiologist at the hospital I volunteer at to shadow her. I've "watched" doctors unofficially in high school, but since it is not only a valuable experience, but a good thing to have on a resume, how do you make it official?

Make what official? I don't understand this question. Like how do you put it on a resume cause there's no such thing as making it "official." This is how I wrote down shadowing on my resume:

Experience Description: During my senior year, I participated in the senior project that is expected for graduation. It was three weeks of observation and/or volunteer in certain profession(s) of your choice. I decided to follow three doctors. For my first week I was with Dr. Amir Kabour in the Cardiology Dept at St Vincent’s Hospital My second week was spent with Cardiothoracic Surgeon Dr Amir Shah. My final week was spent with Dr. Katragada in the pulmonary department also at St Vincent’s. I thought the experience during this time was immeasurable in regards to my future decisions. The doctors I followed, the patients I met, and the day to day occurrences were beyond what I could have imagined. I enjoyed working with all the doctors. Although the three above were the main ones, I also spent a lot of time with Dr. James Tita, Dr Vijay Mahajan, Dr Tarif Kanaan, and Dr Raheel Jamal. It was one of the factors that ensured medicine was field I want to be in.
