How to improve on my ECs?

Freshman year I didn't do much because I was new to the school and other stuff was going on in my life that took up some time. The main ones are

P.A.W.S club - entire year
Erika's Lighthouse club (opened around March though)
Orchestra, which was a class, but met outside of school for 2.5 hours a week, more when a concert was approaching.

Sophomore year:
I quit orchestra because it was really stressful and I just didn't enjoy it anymore. Will this hurt my chances at getting into good colleges?
Erika's Lighthouse club (entire year, very involved)
Volunteer work towards the end of the year and continuing into summer (except the after school program)
-nursing home (varies depending on who I'm with and if they like me)
-food pantry (3 hrs not including driving time, usually weekly)
-after school program for middle school kids in another town (2.5 hours at a time, 1-2 days a week)
French National Honors Society (was initiated towards the end of the year)

Needs a lot of work, right?

Next year I'm planning:
Erika's Lighthouse club (hopefully a leadership position too)
DECA
Continuing all the volunteer work as much as I can
FNHS
Hopefully NHS, but I don't know when my school starts that for the juniors.
During the summer I hope to do a college program at Wash U or a couple other places I've looked at.

Senior year:
Erika's Lighthouse
DECA
Continue all the volunteer work as much as I can
FNHS
NHS
Hopefully be a peer group leader for the freshman (not an EC, but a show of leadership).

I know that looks pretty pathetic, but I also have a lot of responsibilities at home too (my parents are divorced so I take care of my younger siblings a lot and cook, clean, grocery shop, etc.) I also do activities that aren't really ECs, but I'm really into them, such as baking, crochet, other artsy stuff, and biking. Those don't really count though.

Any suggestions?
I'm not really athletic, I can't run more than once a week, otherwise I get shin splints. That's why I bike a lot, but biking isn't a school sport.

karate?
oh and on a another note you might wonna mention that raising your siblings thing on your app
