So I haven't been able to attend a Math class, which is a prerequisite for my major (Computer Science). I have the option of either taking an incomplete grade, and retaking it next semester, or trying to do the rest of the coursework, which, if I get a 100 on the final, will yield a B-. I am sure if I take the class again next semester, I can get above a B-, but which would look better? A B-, or an A replacing an "I" on the transcript.

An A always looks better than a B-, and you will essentially have an A. No one will care that it was originally an I. In fact, depending on how your institution does transcripts, no one may even know. (Also, the B- is assuming that you get 100 on the final, which is unlikely).

I would recommend that you take the incomplete and then retake the class next semester.

That is a very generous “I” policy. At my university, an “I” grade just means that the student has 6 weeks into the following semester to complete the work from the previous semester. If your school actually allows you to take an “I” and repeat the entire class in the following semester with no other repercussions, go for it.

That’s definitely a different approach than my university. With an “I”, we have up to 6 months to make up work from the class, depending on how it’s worked out specifically with the professor. After completing the work, the “I” disappears completely from the transcript.
If your “I” will be replaced by whatever you get next time around, I would say go for it.
