If I'm accepted to NYU's school of arts and sciences... how feasible is it to take classes between the colleges, like Stern and Tisch? Can you even get a dual-degree?

It depends on the school and the class. You can’t get a dual-degree unless you apply and are accepted to those schools as an internal transfer, although people in non-CAS schools are able to do a second degree in CAS. For specific classes, your mileage will vary wildly. I know that for Stern, first pick of classes goes to Stern (and Gallatin) students, and CAS students have to wait a week or two after regular registration to see if there’s still space in the class. Tisch classes are not really open to anyone else because they are largely studio based. They do have a program called Open Arts that hosts a range of classes for non-Tisch students, but these are in high-demand and tend to fill up quickly. They also don’t fulfill anything for a degree except for general electives
