Do many students choose the interdisciplinary/student designed path for majors? I am interested in cognitive science, so would it be too difficult to create my own major based on the courses offered?

Not many students do that, but some do. Interdisciplinary majors are usually the more popular combinations like math and economics. If you want to have a background in cognitive science, I recommend the major neuroscience combined with a major/minor in computer science. Some computer science classes can be chosen as the elective requirement for the neuroscience major.
