From all of my interviews, the only thing that the interviewer had access to was my name and the major i listed. Other than that, they go in blind to the interview.

If you are doing an alumni interview near your home, the interviewer will not have a copy of your application. Schools gives interviewers some details about the applicant but not the application itself (and some interviews are conducted before application deadline so it would be impossible). If you are interviewing on campus, it's still not likely but more possible the staffer may have read your application first.

how important can interviews be?

If you want merit aid at University of Rochester you have to do one.

I think interviews are important because they are more personal than just paper. And I would bring a copy of your resume along with you if you have one.

At least one of the schools I had an intervie with did have access to my application. But the interviewer wasn't just an alumni, but someone on the huge staff of the admissions.
Another school offered me a large merit-based scholarship, and the interviewer for the scholarship (after they nominated me, after I was accepted into the school) had acess to my application.
