I fortunately have three stellar recs, and many colleges only take two. One of my teachers is an alum of Denison University, which I am applying to. Is it a good idea to use her letter as opposed to the other two letters? Any two of them shows a separate side of me well.

It should help, especially if the alum was a good student while there. I would definitely use it.
Also you could mail the other rec seperately to the office of admissions. They will read it or throw it away. Either way, it won't hurt you.
