I took the SATs my sophomore year and did pretty bad (1980)... and then took them again in October and did really well (2210). I couldn't take them my Junior year at all since I was abroad in Chile on exchange year. I'm debating whether I should take them again in December, and leaning towards no... does it look bad if you keep taking them over and over? Or should I get another high score to outweigh my one bad score. I'm thinking they'll see the gap in dates and go "damn, nice improvement!"

Take it 3 times dude.

A 2210 is really good already.

Depends. If you feel you can do better, take it again.

For example, I took my 2250 again because I got a 700 in math, whereas I usually get 800s.
