Just take classes in Theatre vs. minoring in it

Is it a waste of time or waste of money to take a couple classes in theatre to understand how to create a resume, develop audition abilities, and understand fundamentals instead of declaring it as a minor?
I want to have background knowledge of it and possibly audition in LA after I graduate.

I’m a little confused by the question. Do you already have acting training, and just need basic information about the indiustry and how to audition and market yourself? Or do you need acting training as well?

In terms of a minor, at most colleges, a theater minor just includes acting classes - not “industry” classes. Classes on marketing oneself and information on the industry are usually given to acting majors in their final semester.

I agree with the above. Plus, if you decide to move to LA and start auditioning, you might want to consider taking some classes out there. Take a look at some posts from @fishbowlfreshman where she makes recommendations like that.
