I'm a little confused about how placement exams work. I registered to take placement exams for both Spanish (for which I got a 5 on my AP exam and want to continue this fall) and Russian (my native language). For Russian, after I take the exam do I have to take whatever course I get placed in right away or can I postpone it until sophomore or junior year? Also, for Spanish, since I don't know where I'll be placed I can't register for it on the student center. Do I just leave it out and then add it into my schedule after the test?

For Russian, taking the test doesn’t mean that you are required to take a course that semester. You’ll be fine waiting a year or two after the exam (unless the exam only lasts for a year or something… you should be able to check that online somewhere).

For Spanish, you can either guess where you might be placed and change it later (my guessing was pretty accurate and I stayed in the same course after I took the exam/learned my results), or just wait to add it until you know what level you’re at. Your call.
