Loophole or Not a Good Idea?

I am currently a first semester freshmen at SUNY Oneonta and am currently an economics major, but I will be changing my major to finance due to the lack of practical uses of an economics degree. I will eventually be looking to transfer into NYU, Binghamton, Boston College, or another top tier school. My question is since all these schools have competitive finance programs, would it improve my chances of getting in by transferring as an undeclared major (while taking as many finance courses as possible) then switching my major to finance once I am in, or is there no way to beat the system?

Also how much do extra curricular activities matter when transferring between colleges? I forced myself to do them in high school, but I am tempted to just join 5 or 6 clubs and never show up to any of the meetings, but if they make a big difference I will force myself to actively participate.
