Math:Computer Science vs Computer Science

I’ve been accepted to UCSD as undeclared and I applied for CS. Since I’ve been admitted as undeclared, I can’t take CS, but I can still take Math+CS. Can anyone explain what the difference is in skills learned and how it would affect me in the career field. I want to become a programmer after college

You can still apply to be a computer science major. It’s just a competitive process, and you have to take CSE prerequisites and do well in them.

If you really want to major in computer science, rather than math, I would recommend trying to get into the computer science major, or consider a different school, if you have others that you would also like going to.
