I am Middle Eastern but legally, I am considered white in Colorado. If I mention my ethnicity in an essay, can I still get that minority boost even though I have been forced to select “white?” If I do an interview and they see that I am dark, will it look favorably upon me?

It is not a dumb quetsion, it's just one that is very, very painful to read. You completely misunderstand what a URM is if you think "darkness" is what this is all about. If it were, people could go to a tanning salon and expect URM status.

being middle eastern won't help (any asian ethnicity is considered equal or sometimes worse than being white in admissions terms), i wouldn't even allude to it. and if the whole white thing is a problem, don't check anything; let them draw their own conclusions
