-Should I retake US History? I got a 750 on it, which was kind of low for me at the time. However, I took AP US in 10th grade, and I'm a junior now, so I'm not sure if I'll do worse.

-I know that I'm definitely retaking Math 2 (got a 710 on it, really disappointing for me since I was expecting higher. I guess that studying for it 2 days before isn't the best technique.) I used Princeton Review last time, should I buy a Barron's book instead?

-How is the Lit test compared to CR? I got 800 on CR, and I'm pretty confident in my reading comprehension, but how long would you recommend studying for it?

-With the score hiding option now, would it be a bad idea to retake my Math 2 and take the Lit test on the same day? I know that if you want to hide a score, you have to hide all of the scores on from that day.

-Has anyone taken the SAT 2 Physics exam after one year of IB Physics? Any suggestions on whether to take it or not?

Alright, I can answer your questions/concerns about three of the four tests you listed. I took Math 2 in january of my junior year, and got a 800 the first time. For that test, I used the Princeton Review book, but I then discovered the blue subject test packet given out by collegeboard. So I looked at that packet and found the topics tested in math II, yet a few of the things listed in that CB packet was not in the PR book. I went out and got a McGraw Hill book for Math II, which was actually the best book out there in my opinion. It covers all the topics. I mean, one cannot possibly do well without knowing all the topics tested.
For US History, I also took that test in my junior year, in may. And I got a 790 on the test. The thing is, I took the class in sophomore year, yet took the test towards the end of my junior year. I bought a Kaplan book, and a REA book. While the REA book may sound obscure, it is a great book, really thick and comprehensive. Also, I supplemented those two books with a set of Barron's flashcards for the APUSH test. In 2 weeks, I read those things at work and got a 790. You should try that method.
The physics test was the darn hardest test for me. The night before the test I did not go to sleep and had to learn electricity, magnetism, induction, and optics. I used the PR book and the Sparknotes book, and ended up getting a 750. The sparknotes book was definitely better, so think about trying that one. Physics is a comprehensive test, not necessarily hard.
Good luck
