If I came into spring semester as a student athlete and then decide to not play, will my admission acceptance be rescinded?

No,but any athletic aid will be.

To be honest, if you were a recruited athlete where you had significant assistance to get in, it would be a black mark against your HS coach and potentially their program, maybe even the guidance counselors for kids not even going for sports, which is a big deal. Everyone knows that extra advantages are given to athletes for admission. If you game the system just to get in, you burn everyone along the way.

^^^ that and frankly it is just of poor character to commit to a team and then bail - and even worse if your acceptance to the school was helped by that commitment.

Until you sign/accept your scholarship offer, anything can happen. Once the school offers you the money, and you sign to accept, the school cannot take back the money regardless of your playing status. If you tell the coach that you now intend NOT to play, and have not yet signed your scholarship agreement, I suppose he could talk with admissions about your status. I doubt he would though, if you are a good recruit, as he would worry about you possibly playing for a competitor.
