I’m concerned with the small possibility that I get rejected from every school I will apply to this fall, even my safeties, even though my stats are good and ECs aren’t world-class but decent. Am I being unreasonably paranoid?

This is why rolling admissions and EA are nice. You can have some admissions decisions before the RD round closes.
Depends if you have true safeties on your list.
You should have a real safety on your list. Not just one you know you can get into, but one you’d actually attend and be happy to attend.
And even if you were rejected from every school, the world will not end. You can still apply to some in May or take a year to regroup and apply again.
What answer are you looking for?
I say that because you have the capacity to control the “big” outcome by researching acceptance criteria, setting appropriate expectations, putting together strong applications, creating a diverse list including safety schools, etc.
Don’t feel helpless or troubled. You are empowered. You can’t pick which specific school will accept you (small outcomes) but you can ensure a positive result by owning the situation in a mature and rationale manner.

If you correctly selected a couple of safeties, there should be no reason to worry.
Yes, there are reports every year of folks who are rejected everywhere. They usually thought a single top 50 school was their “safety”.
I just have to second the rolling admissions and EA advice. You can have a couple of answers (and hopefully admissions) in hand before mid December, which takes a HUGE amount of pressure off, and also gives you some guidance for if you need to widen your net for RD round. If you are worried, please do yourself this favor and try to get some rolling and EA apps in!
