I am in several clubs and competitions, but am currently not in any sport (except for martial arts outside of school, which is not competitive). Would this put me at a disadvantage to other applicants who do play sports?

No. Long ago that may have been true but not today.

They are looking for students that are passionate about their interests. IMO academic related ECs play better than sports related ones do.

Okay–Thank you

Varsity sports are a popular EC simply because they typically require 20+ hours per week in-season (roughly 12 weeks) and half a dozen or more hours per week out of season. If competing for all four high school years, a typical athlete will also likely demonstrate some level of development, commitment and leadership.

If your EC can show a similar level of positive characteristics, then it should substitute effectively for sports. The athletic route is simply easier because they are so well known.
