Okay, so I have some essay topics. Now what? (How can I make a well written essay?)

I’ve spend the entire day gathering some topics that might be worth writing about.
My worry is that the essay won’t be interesting or good enough to gather the attention of admissions, so I would appreciate some advice on writing about any of the topics below (or just in general.)

Essay Topics:
-I have a personal story that I refer to as the “Angela Story”, which I’ve worked on since the (aprox.) third grade. I am probably going to write an essay on it based on previous suggestions, but it doesn’t feel like I could write it in an interesting manner. It would probably just end up sounding clumsy and awkward, especially considering the topic (how could you make it sound good at all?)
The story about a red-headed dwarf girl that wants to become a knight, and her journey to accomplish that goal. She goes on quests, fights a dragon, etc. (typical fantasy stuff).
-I am trying to get into an internship for the arts, but I don’t know if I’ll be able to do it at all (plus it would be too late to write about it even if I could.) Since we have to demonstrate some kind of skill in the arts, I mentioned a website I frequented to make music for fun (onlinesequencer.net). I’ve written some short pieces and now my band teacher wants to work on music composition with me. I don’t know how I would direct the essay if I choose this topic. (my username is bluepaintcan123, if you’re interested.)
-I guess I could write about the first time I made a dress? (I get a new hobby every five minutes, I know.) If you ignore the terrible sewing work, it actually looks nice, so I guess that’s a plus.
-The first time I tried a sport, which can be summarized as “wow, I went out of my comfort zone, made some new friends, and tried something new. I am never doing this again.”

What majors I’m interested in
-I am undecided, but for the essay questions where they ask about my major, I would probably put political science/english/philosophy (maybe journalism)
I’ve always adored being able to express and explore ideas (especially those of a controversial nature), so I feel as though something along those lines would make the most sense.
I took a class in socio-political philosophy over the summer so I guess I could write about one of my experiences in that class (I enjoyed it a lot, so this essay may be easier to write.)
I’ve also spend some spare time on debating websites like debate.org for fun.

Travels
-I could write about my vacation to my parents’ country of origin. Life there was so drastically different from here so there is a lot of potential in an essay.

What do you think? Any advice?

I would start by thinking about what you want the readers to know about you that they wouldn’t get from your test scores, transcript, list of activities, and letters of rec, or something about you that might be brought up by letters of rec/transcript/etc but that you want to expand on.
Based on what you’ve written here, it sounds like you’re someone who’s not afraid to try new things and put yourself out there. It might be interesting to try and tie a few of these together, like maybe comparing the first time you made a dress to the first time you tried a sport or how you’re starting to work with music composition. I think with any of these topics, you could reveal to the readers how you’ve got a lot of interests and that you enjoy doing things for fun, not just to beef up your resume.
This is just some advice similar to what my counsellor told me, so I might be way off base. Best of luck!
