When on campus, see if any professor may need someone to work for them in a lab. You wouldn’t do glamorous work but you’d have a unusual EC that demonstrates your interest in science and/or humanities. For a Chinese applicant, history or IR would be more unusual and may help you more, but there may be way fewer opportunities.
