Picking classes for senior year, will it affect my chances of getting accepted?! Help!

Hi! I’m currently a junior and need to pick my classes for my senior year next week. Here are all my schedules throughout HS:

Freshman: (school doesn’t offer AP)
Common Core Algebra (regular)
Global Honors
English Honors
Living Environment Honors
Italian 2 Honors

Sophomore:
Common Core Geometry (regular)
AP World
English Honors
Earth Science (regular) (something really complicated happened and they dropped me to a regular class)
Italian 3 Honors

Junior:
Common Core Algebra 2/Trig Honors (teacher from last year recommended me into honors)
APUSH
AP English
Chemistry (regular)
Italian 4 Honors

I left out all my electives for each year because they were pointless to mention. Anyways, this was what I thinking about taking for senior year:

Common Core Precalc Honors
AP Stats
AP Government
AP Bio or AP Environmental (?)
AP Lit or Syracuse English (?)

So here are my questions:

  1. How bad would it look to drop Italian senior year? I’m sorry, but I currently have the teacher who will be teaching it next year, and she is TERRIBLE. Barely teaches and gives very difficult exams. This is the only class the brings down my GPA significantly. I will not be majoring anywhere in the language field. Next year will be a level 5 Italian class, so does that mean I’ve taken 4 years of foreign language?
  1. How hard would it be to take 2 math classes, precalc and AP stats? Is AP stats easy, hard?
  2. AP Literature or Syracuse English? Currently, I am leaning towards Syracuse English which is basically a college-level class (weighs the same as an AP class) where you get to earn up to 6 credits. I absolutely hate poetry and anything along those lines and I feel like I would very poorly on the AP Lit exam. I'm currently taking AP English and I enjoy it, but that's because the passages aren't on the lines of literature.
  3. Biggest thing I'm deciding on: AP Bio or AP Environmental? I know I won't major anywhere in the science/medical field. I want to major in business and journalism, so I was just thinking about taking AP environmental because I really do not like science. I did score a 650 on the sat II for bio, but I don't know. I did hear that the AP exam is easier than the sat II?
  4. Does my schedule look like I'm taking the easy route? I feel like the class rigor of my schedule is really weak and it will look like I'm slacking since it is my last year of high school. I'm dropping Italian, taking Syracuse English instead of AP Lit, and maybe taking AP Environmental aka one of the easiest APs instead of AP BIo. Help!

I want to go to Colgate University or the School Of Management at Binghamtom.

Completing level 4, even in less than 4 years, counts as 4 years of foreign language for that vast majority of colleges. If you don’t want to continue, it will make no impact.

Relative to precalc, IMO, AP Stats is fairly easy, but every person will have a different opinion

Either is fine. FWIW, Colgate does not accept AP credit for English. Many private colleges don’t give credit for both AP Lang and AP Lit, so Syracuse English is a perfectly acceptable alternative.

AP Bio is not needed for your career plans. Choose the class you like better/has the better teacher/has a better track record on AP exams/you will do better in.

No, considering the balance of your schedule. It’s plenty rigorous.
