All of the schools that I plan on applying to do not require the optional SAT essay score, but would it benefit me to do it anyways and do well on it? or is it completely ignored during the application process?
There is not a universal rule. A number of colleges recommend it and will consider it. For others, it’s just the equivalent of another sub-score that they also ignore. If you think you can ace it, you might as well put up a great score. But it shouldn’t be your focus at all if you are looking at colleges that do not require it.
