Pre-Reqs, Summer classes, Finishing up and Transferring

I am in a strange position and have not been able to get the information I need from all the counselors I have asked.
I only have one more class for my Associate’s degree, a math class. I also have two more classes to finish as pre-requisites for the Bachelor’s of Health Science program at the University of Florida. UF is my dream school.
I’m not sure if I’ll be able to be accepted.
I am also unsure if I should apply as a transient student to Santa Fe, the pre-requisites that I need are Intro to Biology and advanced writing (or the equivalents ENCX210 or ENCX254.) My college, PHSC, does not offer an equivalent for those courses but Santa Fe does.
All in all, I’m not even exactly sure what questions I should be asking. Please help me. I’m at a complete loss.
Could use some info on recommendations for a plan, whether or not you think I’m able to be accepted with my ACT math or if you think i should retake for a better score.

ACT - Eng - 25
Math - 19 (Took Intermediate algebra)
Read - 31
Top 10% of my HS class, graduated 2017
Currently 3.67 GPA
Member of Psi Beta and Phi Theta Kappa
CE Intro to Stats, A&P 2 w/ Lab

You need to communicate with the people at UF. Is there a chance you can be admitted there, and take the missing classes once you have enrolled?

Can you get any of the needed classes online?

Yes, do finish that math class and get your AA degree.

I have definitely tried calling UF and talking to them already and I can not get much information. The program is limited access so i can not be accepted without completing the pre-reqs first, according to the people at UF. I could likely take the writing class online through Santa Fe.
