I had originally bought a Kaplan prep book for the test in 2003 or so to take it in the fall. I found it extremely easy. When I propped open a Barron's, from 2005, it seemed like there was much more stuff that they would test me on. Is this because Kaplan 2003 is outdated (and more areas of testing have been introduced such as polar coordinates and cardiods etc.) or because Barron's book overdoes it?

Probably both. The best prep for Math IIC is barron's. Period. It's comprehensive, but if you know everything, 800 guaranteed. Meylani's practice tests are also helpful.
