Scheduling problems: AP Bio or AP Spanish (IV)??

Hello everyone!
I would appreciate as much advice as I can have on this matter: AP Bio or AP Spanish for senior year?
The two conflict in my schedule and I absolutely have to pick one over another because I refuse to drop any of my other classes. (I realize that is a stubborn stance to take, but I will explain why I am taking it a bit later on in the post :’)).
AP Bio: I am planning on going into genetic engineering. I love biology and I haven’t had it since freshman year. However, I hear that the teacher doesn’t prepare students for the test very well - she’s apparently a decent teacher but not outstanding in the least. However, there IS a Human Phys class I could take instead of it, although I am, admittedly, not a fan of much of the human body. Studying it, anyway - minus the whole molecular biology part.
AP Spanish IV: On the flip side, I’m definitely not planning on studying Spanish in college. I plan on studying Japanese or Latin, but I realize colleges prefer it when students see the whole “four years of a foreign language” thing through. Spanish is survivable for me (or was this year) but I enjoy conversations in it, despite the deficiencies in my writing in the language. In contrast to the bio teacher, the AP Spanish teacher is wonderful and I believe she has a 100% pass rate (of her students who took the exam; she’s been teaching for 5…6? years at our school). In addition, I already know her because she was my Spanish I teacher, so I am accustomed to her style and I can personally vouch for the fun I had (and probably will have, if I decide to take her class next year) in the classroom.

The nearest community college offers online classes (because coming in for an actual class is admittedly a hassle for me; I may have summer plans and don’t have rides to the college itself): Elementary Spanish II, and Biology - Intro to Human Genetics.

What sounds like the better class for me to take next year? And when I end up with an empty space, what should I choose to take instead?

Part of me is pressured to be valedictorian (ah man, it’s not even my parents, just me), I won’t lie. At the same time, it feels like achieving the feat is both implausible and a bit worthless in the long run. I’m really clueless as to what to do, because I realize that both of these classes are ones I could equally enjoy and strive hard in.
