Should I apply EA?

I'm wondering if I should even bother to apply EA to Yale next fall, or if I should apply to places that I have a better chance at and then try for Yale RD. I'm just worried that I'm not nearly as amazing as most applicants and I might just be wasting my time.

I'm a junior, female from a relatively competitive public school in the SW, that usually sends a couple students to Yale each year. School doesn't rank.
GPA: 3.95 uw
SAT: 690 R, 680 M, 670 W (a 2040 is pretty low, so I retook it May 5th and hopefully did better)
I'm taking World History and Literature SAT II Subject Tests in June, and then Spanish next October

Some of my Classes:
Sophomore year-AP US (5), Latin 1, Spanish 2
Junior year- AP Lang 11, AP Euro, Spanish 3, Adv. Bio (my one B), Pre-Calc
Senior Year(next year)- AP World Lit, AP Spanish 4, AP Psych, AP Stats, Latin 2, Ethnic Conflict
I know I really should take Calculus, but I'm just really really hating Pre-calc and I know that I will be miserable if I take calculus next year, so I opted for stats instead. I'm much more of a humanities person and I really enjoy languages, and I don't think Calculus would help me in my intellectual development in the slightest. And if Yale doesn't like that, then that sucks, but oh, well. But I'm still concerned that I haven't been taking a tough enough schedule, but I don't see anything that I can do about it at this point.

ECs (including activites I've committed to for next year):
Varsity Tennis (10 hrs/week), 9, 10, 11, 12
Peace Club, 10, 11, 12
NHS, 10, 11, 12
Film Society, Activites Director, 10, 11, 12
Church Youth Group & other Church activites that take up almost 10 hrs a week, 9, 10, 11, 12
School Newspaper, writer (11), co-editor(12)
Hindi Self-Study, 2 summers
French short course at comm. college, this coming summer
United Way Youth Co-Chair, 12
At least 100 hrs of community service, will do more this summer

Also, I'm going to try out for a part in the school play in the fall. I think I defnitely get a pretty big role even though I've never done it before. I don't mean to be cocky, but I'm pretty positive that I will. I really want to do this, but I'm afraid that it will put my activities all over the place and make me not look very focused on one thing. My main interests are languages and cultures and movies and community service. I'm planning on taking a gap year (if finances allow) and going to Africa and India and SEA, travelling and volunteering. My dream job would be to work for UNESCO, but maybe at a small NGO before that. I feel like most of what I do does point me towards that, and I suppose I just need to get that across to the admissions officers.
