I am going to be a high school senior next year, and am interested in business. While I would like to take a business course next year, I have been told that taking a science course would look much better. I am looking to apply to pretty selective schools. I have to choose one or the other, I cannot take both.

depends on the level.In AP physics vs something like “Business Law and Management,” AP physics would look much better on college apps and give you a better chance of getting into your dream school and studying business there. Something like honors geosystems vs the same business class, go with the one you are interested in because both of them would not really stand out on its own, but the business class could be used to show your passion for business.
A science class will look better on college apps to be sure, but I’ve learned from experience that picking classes solely based on that leaves you feeling unengaged. I had to make a similar/opposite choice (Physics vs AP Spanish), and chose Spanish because it was AP. I wish I had taken physics instead because it’s a lot more interesting.
In your case I recomment asking kids who have taken the business class if it was worth the time. If it seems like it, take it knowing that it will somewhat affect your chances.
For very selective universities, you should have 4 “units” of English, Social Science, and Science (including all three from bio, chem, physics and preferably one AP science of your choice), math through precalculus honors or calculus, and foreign language through level 4 or AP.
