I have taken and planned to take a lot of ap courses across the math, english, foreign language, and social studies areas. My perspective major is definitely political science and economics. I did very well in honors biology this year, but do you think going forward it would be beneficial to perspective colleges to have taken any ap science courses even though I am not going to major in them and they are not really of interest to me.

Yes I would take one. 2 reasons. Even if that is not what you plan on majoring in, colleges like seeing you push yourself with a challenging course. The second reason is, depending where you go, some colleges have core classes you have to take where taking a AP science class now could knock out that General Ed. requirement or make the class easier.
However in the end it all depends on your motivation. You don’t have to take an AP science at all if it is really that uninteresting for you and will cause you to not perform well. However if you handle a class that might not be your favorite then go for it. So if you hate physics don’t take AP Physics. But if you are good a Bio and feel neutral that might be a good choice.
