I know that subject tests aren’t really a requirement unless specifically stated but I was wondering if it was advantageous to take them? I would be taking SAT II Bio and Literature. However, I’m doing BIO101 in college now and also some higher level writing / English courses which I think may prove my aptitude. So, would it still be better to take the SATs in order to better my application?

Generally not, unless specifically asked for by the college you want to transfer to. SAT subject tests cover high school level material, so they may not be considered useful for applicants who have already done college study.
I’m applying as a sophomore, does that make any difference? All of the schools I’ve looked into have stated that they were recommended but not required for their freshman class.
Do the colleges’ transfer admission web pages say that sophomore transfer applicants should send subject test scores from newly taken subject tests?
No nothing is specified on the transfer pages. They only ask to send in the normal ACT/SAT.
Taking the Bio SAT subject test after taking College Bio 101 completely misses the point. An AP, maaaayyyybe- it is meant to test 1st year of college mastery. But a Subject Test, as @ucbalumnus pointed out, is meant to test HS student mastery. You would be expected to know more than that now. Subject tests are considered as part of the transfer package when taken in HS.
