I’ve been looking at some requirements, such as that of the University of Illinois Urbana-Champaign. I’ve noticed that some schools require 3+ years of English. From grade 9/year 10, I’ve only taken 2 years of English language and English literature for my IGCSEs. I haven’t taken English lit for my A-levels because that isn’t specific to my course.

Agreed. A college’s recommended HS preparation is not meant to cover each and every case. Yours is a perfectly valid reason of where it would not apply.
They’ll check you took IGCSE’s in English, math, science, foreign language, and history (plus a couple others). They know about the specialty system for A levels.
