Summer: Eth 21AC or Italian R5B?

So I'm going to be a freshman this fall, and have planned to do the Summer Sessions thing. I am now thinking that I should do at most one class or no class at all (seeing that I wouldn't have received any fin aid if I had >6 units anyway). So here's what I have to decide between:

Ethnic Studies 21AC with Saragoza (would've taken this as P/NP)
VS.
Italian Studies R5B with Spackman (maybe and/or with Butler; anticipating a 4 on AP Lit, although the score can go either way)

So how are the classes (with their respective professors)? I've heard good reviews about Eth 21AC, but Italian R5B is considered to be one of the easier (not easiest, easier) R&C courses (according to you guys). Also, I can potentially choose other AC courses in the fall/spring (w/ P/NP), whereas I'm not too eager about literature anymore. And no, I don't intend to overload myself during the summer (or at least this summer :P).

Also... I haven't really enrolled in Italian yet (originally intended to do Math 54 over the summer too (will be dropping that for now)). However, you can apparently still register/add courses... And there's two more seats...
