Teacher Rec Advice

I have to confirm my teacher recommendation this month, and I'm really torn between two teachers.

I have had the same language teacher for 3 (going on 4) years in a row. I have consistently earned A's in this teacher's class, and was given the top student award for my class last year. I'm not a language prodigy :D, but I've always done well and have built a good relationship with this teacher. They have known me the longest out of all my teachers, and would probably offer a very good, solid recommendation.

I am also considering my sophomore-year English teacher. I really excelled in this class and received the top class award. The teacher/class is notoriously difficult, and I got very good grades in this class. The teacher was really enthusiastic about my writing and wrote me a nice note at the end of the year. This person would probably write an excellent recommendation (can't hurt that they're an English teacher :) )

So, should I go for a recommendation from the teacher I've known/built a good relationship with over time, or the teacher I clicked with as an underclassman?

I'm thinking colleges would prefer your junior teacher. Adcoms might wonder why you went all the way back to sophomore year for a rec.

I was under the impression you were to have a teacher from your junior or senior year write your recs.

Don't most schools require two recommendations?
