Are colleges interested in things listed on college resumes (acitivites, EC's etc) that were done before freshman year of high school? I had a Bar Mitzvah and spent years of prep for that, can I list it?

They only want you to list activities starting in freshman year of HS. An exception might be a national or higher level of achievement in something (eg. spelling bee, Olympics, etc.).

What if it's just listing a continuation of an activity? For example, my S was in mock trial from 7th grade through 12th (next year.)

^^^For a resume, it would be OK to put 7th through present. But for the CA, they're pretty specific and only give you 9th as the lowest grade for participating in an activity. Of course working in his favor is the fact that since he's done it so long, he's likely to be at an advanced level and perhaps getting some sort of recognition for his talents. You can always write something in the "Additional Information" section of the CA if you really think it's relevant.

Stick to freshman through senior. that's what the schools really want to know about.
