I’m currently a senior Civil Engineering student at Purdue University and my GPA is around 3.2. I only had 1 internship. I really want to go to UK for MSc in Economics. I’m thinking of Oxford, london college of economics, university college london, kings college, etc.
Any thoughts? or similar experience?
I would be very surprised if you could get in at Oxford with that. You can look up the minimums you need on each UK University website. Here is Oxford: https://www.ox.ac.uk/admissions/graduate/international-applicants/international-qualifications
You can look up LCE, UCL, and Kings the same way.
You might consider Strathclyde in Glasgow:

Agree with Sweetgum: you need to be looking at a different level of selectivity. Even for Purdue and even for Engineering your GPA is not dazzling… Oxford expects a 3.8. LSE does have an Econ masters specifically for people with technical degrees (Econometrics and Mathematical Economics), but they want a minimum 3.5 GPA. Kings encourages engineers to apply- with a 3.5.
Be prepared for it to be a 2 year course at many places, b/c your undergrad degree is not in Econ.
@Sweetgum’s suggestion of Strathclyde is a good one- they will take a 3.0 from any field, and Glasgow is a great university town.
