I just retook the SAT. I got a 600 math, 700 writing, 730 verbal last time. This time I'm really confident I did better on math, but my essay SUCKED and my verbal was probably a little weaker. Will it look bad to a college if my total score went down, but my math went up?

Also, how do you know if a college requires scores to be sent to them officially? Like, my scores are on my transcript, and my counselor acts like that is the way everyone sends their SAT scores. Will most colleges accept this?

Most colleges just look at which ever test you scored higher on; the order does not really matter. If your total score went up, all the better for you.

Here is the thing about sending scores: Most 4-year colleges require that they recieve the scores by Dec 31 (from what I've been told). Since we get transcripts in late January, it might be too late for you to show them. Also, almost all colleges that require the SATs want your official score report that only collegeboard.com can send. If I were you, I wouldnt take the risk.
